Matcha (抹茶) is a powdered green tea of the highest grade, famous in Japan. It is pronounced ‘malcha’ in Korean and ‘muocha’ in Chinese.
The tea leaves must be ‘sencha’ in Japan or ‘yeoncha’ (연차) in Korea, which is partially or fully shaded, steamed, dried, deveined and finally milled into a fine powder using only stone mills.
The preparation of the tea, using whisk and bowl, is very distinct and can be learnt using the tasting and brewing notes.

Stone Ground Matcha
Powder: Very fine, slow stone ground, “Ceremonial Grade” malcha (Jp: Matcha). Colour of the finestemerald. Dry aroma of meadows and soft, new mown grass.
Brewed colour: Fully opaque dark green body with pale green froth that holds for a long time.
Aroma: Layers of vanilla, grass and cream.
Taste: Dense and deep. Sweetness of vanilla becoming drying and rounded to a finish of grasslands and spring pastures.
